Abstract

DNA sequences which are capable of converting L-malate into L-lactate are incorporated into suitable vectors and used to transform both prokaryotic and eukaryotic hosts. The DNA sequences and vectors are particularly useful in conferring the ability to perform malolactic fermentation on wine producing yeasts. Saccharomyces cerevisiae 2514-10C/ySWl and E. coli RRI/ySWl were deposited at the A.T.C.C. on Aug. 16, 1982, and given accession Ser. Nos. 20651 and 39176, respectively.
