Abstract

The present invention relates to a process for the preparation of .alpha.-aspartyl phenylalanine methyl ester by reacting phenylalanine methyl ester with the anhydride of N-formyl L-aspartic acid, process wherein the product from said reaction is treated in at least one ion-exchanging resin column and the .beta.-isomer contained in the resulting mixture is isomerized by treatment with acetic anhydride followed by an acid hydrolysis to convert said .beta.-isomer into .alpha.-isomer and ensure the deformylation of said product.
