Abstract

The invention is directed to a process for the hydrolysis of 5-(.beta.-methylmercaptoethyl)-hydantoin by reaction at elevated temperature and pressure in an aqueous alkaline medium. There are obtained alkali methioninate solutions from which there can be separated methionine.
