Abstract
The present teaches new method and apparatus for evaluating ultrasonic images of muscle of an animal or carcass. Method and apparatus are taught for recognizing muscle interfaces of an animal or carcass from an ultrasonic image of a muscle area. Method and apparatus are taught for determining marbling scores of a muscle of an animal or carcass from an ultrasonic image of the muscle. Method and apparatus are taught for detecting an outline of a muscle from an ultrasonic image of an animal or carcass.
