Abstract
A method for washing institutional crockery in a dishwashing machine having at least three washing zones with at least three wash tanks in which the crockery is contacted with wash liquor having an increased concentration of surfactant by introducing make-up surfactant into the penultimate wash tank and bypassing a portion of the fresh water feed from the last wash tank around the penultimate wash tank.
