Abstract
The invention concerns an immobilized maltogenic .alpha.-amylase, which is adsorbed on particles of at least one porous substrate selected from the group consisting of phenolic resins, acrylic resins and polystyrene resins. The present invention also relates to the use of such an .alpha.-amylase for the preparation of a maltose-rich syrup.
