Abstract
Described are reduced calorie edible plastic fat compositions based on mixtures of triglycerides being various combinations of short (C.sub.2 to C.sub.4), saturated long (C.sub.16 to C.sub.22), and monounsaturated long (C.sub.16 to C.sub.22) chain fatty acid residues, and the use of such compositions in edible compositions such as shortenings and margarines.
