Abstract
The invention relates to methods and compositions for removing contaminants from edible cooking oils. Reduction in the accumulation of contaminants such as polar materials, free fatty acids, metals, color bodies, and soaps is achieved by treating the oil with a composition containing effective amounts of silica, acidic alumina, clay and citric acid. Removal of contaminants from oil according to the methods and compositions of the invention improves the quality of the oil and reduces costs as well as various health and safety concerns associated with the production of fried foods.
